She transforms elements of nature into sushi

Chef Miki Izumisawa is a pioneer. She breaks from traditional guidelines of sushi, but in doing so she is able to create unique rolls derived from nature. From the beginning, her restaurant 242 Cafe Fusion Sushi has focused on creating a connection between nature and food. Her most popular roll has always been the Laguna Canyon roll, which was created as a result of forest fires in the area in 1993. This roll specifically speaks to the inspiration Izumisawa gets from the world around her and how she incorporates what she sees into her art. 

In addition to her unique menu, Izumisawa was intent on creating a one of a kind workspace. With an all female staff, 242 works like a well oiled machine. Everyone plays to their strengths and works in complete harmony, from the owner to the dishwasher.
